The gangway usually closes about 30 minutes before sailing

Gang way up 30 mins before departure. You still need 10 mins walking; 5 mins by shuttle bus to get from the main lobby to your ship.
So 1 - 1.5 hours is fine

That would be too bad while you had to find your way to Hong Kong or Danang depends on the ship's direction. You'd better go with knowledgeable agent instead
